Many people will never make tomato sauce because they think it is too difficult. I would like to talk to you today about meat sauce. It is the meat sauce that I grew up on and will rival any. It is a simple recipe, but it is awesome.
First, you need the following:
1 – 28 ounce can of crushed tomatoes
1 – small can of tomato paste
6 – fresh garlic cloves
1 – 1 lbs Hamburger, Italian Sausage, or both
1 – handful flat leaf parsley
1 – 5 or 6 Basil Leaves
Salt, Pepper, Olive Oil and Red Wine (Optional)
In a Pot, place a small amount of olive oil. Place on top of the stove at medium heat. Chop the garlic and sauté until golden brown. Remove from the pot and place the hamburger or sausage or both along with ½ of the parsley and basil at medium/high. Cook until golden brown and remove from the pot. Pour in a cup of red wine. Scrape the bits off of the bottom.
When the wine is almost completely evaporated, place the Garlic, Tomatoes and Tomato Paste into the pot. Most Important Step – place a Tomato and Tomato Paste can filled with water into the pot. Raise the heat to high. When it comes to a boil, reduce the heat to a simmer, add a pinch or two of salt and pepper. While at a low simmer, partially cover the pot. After 25 minutes a simmering, add the meat and simmer for another 35 minutes. If the sauce gets too thick, you can add a little bit of water. The sauce is done after one hour. Add the remaining parsley and basil. To make more, just double or triple the ingredients
That is pretty much it. You can vary this recipe. Make sure you dunk a piece of Italian Bread into the pot to taste the sauce as it cooks. It is the Italian way!
